Here is a recipe we tried and really enjoyed:
Crust:
½ cup butter (room temp.)
2 cups graham wafers
2 tbsp. sugar
Use approximately 24 graham wafers: Mix well with butter and sugar, and press in a 12x9 inch pan.
Cream centre:
8 oz. pkg. Philadelphia cream cheese (room temp.)
½ cup sugar
2 eggs
Dab of vanilla
Mix cream cheese and ½ cup sugar. Beat well and add eggs. Add vanilla and beat again until smooth. Pour over crumbs and bake at 350˚F for 15-20 minutes.
Blueberry Filling:
4 cups fresh or frozen blueberries
¾ cups sugar
2 ½ tbsp. cornstarch
1 tsp. cinnamon
Pinch of salt
Pinch of nutmeg
½ tsp. lemon juice
Bring blueberries and sugar to boil. Thicken with cornstarch and water. Add spices and lemon juice. pour over baked filling.
Cool and cover with whipped cream.
Refrigerate.
